Holy in the Daily Often Starts in the Kitchen--Easy Chicken Dinner
Finding the Holy in the daily often starts in the kitchen as far as I’m concerned. Jesus used meal times as bonding times—connecting with people over food and conversation. I long for this, and I’m sure you do too. But who has time to fix a great meal after a long day at work, school, caring for children, or whatever it is that you do all day long!This week I’ve been staying with my oldest son, his wife and their new baby, Sawyer. Cooking dinner as a new mom can be overwhelming for Sharla, and David needs a few recipes that he can quickly throw together after work, or put in the crock-pot early in the morning.Never fear, Grandma is here! Following is my favorite chicken dinner and it only takes 5 to 10 minutes to prepare. (I’m got it down so fast; I can do it easily in 5 minutes.)
The Easiest Chicken Dinner You’ll Ever Cook!
Oven method:
Prep time: 10 minutesFeeds: 2 to 4 easily1 large roasting chicken, washed and patted dry with a paper towel.4 cups of one inch cubed Butternut squash (I get mine already cubed at Trader Joes or Costco)1 lemon washedPad of butter or coconut oilLemon pepper or lemon seasoningGrease a 9x13 pan with butter or coconut oil. Place the lemon in the chicken cavity. Rub the chicken with pepper salt or lemon seasoning. Set the chicken in the center of the pan and put the cubed Butternut squash all around it. Cook at 350 degrees for 1 to 1 ½ hours depending on the size of the chicken. If it is really large, give it 2 hours. Slice and serve with a green salad and Butternut squash.
Crock-Pot method:
Follow the same instructions as above, but use a crock-pot instead of 9x13 pan. Put the lid on and cook on low for 8 hours.
